Happy Easter everyone! Our long weekend away in Lahinch has finally arrived 🙂 We are so excited and I need to get packing and get the apartment tidied up a little bit before we go but I wanted to share a look at a Carrot Cake I made during the week.
A lady I work with was celebrating a birthday so I brought this cake in to liven things up a little bit. I’m happy to say that it went down a treat – thank god. While I enjoy baking and try to bake as often as I can, sometimes it is such a dose. Honestly, making this carrot cake was such a disaster the first time on Wednesday night that I actually had a little cry from frustration. Absolutely everything went wrong. Getting worked up and frustrated is probably my biggest character flaw and something I’m trying hard to improve so I had to take a little break and just start all over again and thankfully it worked. Practice makes perfect hey?
We are leaving really early for Lahinch tomorrow to make the most of our time there. I’ve been checking the weather and I think it’s going to be a bit of a mixed bag so definitely packing jackets and jeans. I’m looking forward to cosy pubs, loud, crashing waves and great company. I’ll share some highlights on Instagram while I’m there. I know the town is pretty small but if you guys have any good recommendations of where to go let me know 🙂
