Oh them days. You know them. Only a Chocolate, Coffee, Nutastic Brownie will do! This recipe is really easy and just so lovely to serve with a cup of coffee on a wet, windy evening.
Right, you’ll need:
125g chopped nuts (I used peacans and walnuts)
1 tbsp instant coffee
6 tbsp boiling water
75g cocoa powder
1 tsp vanilla extract
4 large eggs
225g butter (salted)
350g caster sugar
150g self rasing flour
Preheat your oven to 190 degrees and line a baking tray with grease proof paper.
Weigh out all your ingredients into a large bowl and beat wit an electric mixer.
Pour into your tin and bake for about 40 minutes – remember you don’t want them to be cake. They need to be gooey.
Get the coffee pot out and serve!
