T Bomb.

Can you stand it? We are now so close to Christmas! All I want to do is open presents. Please.
 I want you all to have loads of options for your Christmas Day dessert and I think this one is an absolute winner. Sometimes ice-cream is just what the people want. While you could make Baked Apples, Profiteroles using our pastry from our Eclairs, a deep Salted Caramel and Chocolate Cake or even a Butterscotch Apple Pudding, I think a Vanilla and Chocolate Brownie Ice-cream Bombe would be perfect. These are SO simple to make and I think they look really fun. I’ve added some honeycomb to mine, but don’t stop there – buttons, marshmallows, fudge, gingernuts, cherries,berries, nuts, raisins, banana – go for it.

Right, you need:
1 batch of Brownies
1 liter of your favourite vanilla ice-cream
100g caster sugar
4 tbsp golden syrup
1 tsp baking soda
First, follow the brownie recipe and make a batch. You want them to be fudgey though so don’t be afraid to take them out of the oven a tiny bit early – remember they’re going in the freezer so it’ll all be fine. When cool, chop them up smallish. Think bite-sized. 
Take your ice-cream out of the freezer to soften up. 
Find a pyrex bowl and line it with clingfilm. Really line it up – this is the only way your Bombe will be able to get out of the bowl again when you want to serve it. I take long sheets of cling so it can completely cover the ice-cream when you’re putting it in the freezer.

Now, weigh out your syrup and sugar into a saucepan and mix. Put on a heat until the sugar has all melted, don’t mix it while on the heat though. Get yourself a whisk and mix fast once you add your baking soda. It will all bubble up like mad – that’s fine. It is now ready to be tipped out onto a long sheet of baking parchment to set. This shouldn’t take more than half an hour.
If everything is ready, it’s now time to put it together. Place your ice-cream in a bowl and beat it until soft. Add in your brownies and your smashed honeycomb (plus whatever else you like) Mix through and then spoon the mixture into your lined bowl. Cover the top with clingfilm and place in the freezer until solid. Alternatively, you could put a different type of ice-cream in the middle so your bomb will have layers, even more impressive.

When you are ready to WOW everyone in the world with its’ amazingness, simply take it out and remove it from the bowl. Get some melted chocolate – white, dark, milk or even a mix would be lovely – and pour it over the top of your bombe. If you haven’t bothered with the honeycomb, why not smash up a Crunchie and put it on top too? It will set almost instantly – tuck in!
